Great choice! Our one-day cooking retreats give you a wonderful taste of Te Whenua. You will learn to cook a selection of seasonal plant-based dishes, discover inspiration and connection with nutritive ingredients, and be nourished by convivial conversation. The dishes we create during the day will be our delicious shared lunch. This day retreat is sure to be a wonderful day out, rich in opportunities for learning, relaxation, and joyful connection.
The theme for this month is "preserving summer'. We all want to hang on to these long, warm days and enjoy the lush produce that defines mid-summer. On this cooking retreat we will celebrate the season by creating a lunch bursting with the taste of summer, and also use some traditional preserving techniques to capture the flavours and nutritional goodness of local produce so we can benefit from the summer season that bit longer. We will explore various preserving techniques - going beyond using lots of sugar to make jam! You can preserve foods using salt, sugar, honey, vinegar (or combinations of these), using alcohol, or by lacto-fermenting for example.
(Note that not all the ‘preserves’ will be part of our lunch - they require that most valuable of ingredients - time! But you will learn the know-how to create your own supply of tasty condiments and some nutritional remedies, using local summer produce).
